Hot Springs bring me such joy! I already love taking baths, but it’s a hot bath in the middle of beautiful nature, sometimes with tropical fish! It really can’t get much better (I lied, it can. Remove the splashing children. It just got better). So I am kind of a hot spring junkie; I’ll go whenever with whoever will join me to any springs within a 4-hour driving radius. Ready to hear my top 5?
So it’s been a while since my last adventure and I’m getting extremely antsy!!! I mean, yes I’ve done little day trips around Utah and whatnot, but I have yet to do something BIG. Big as in, out of the country, for that matter, the continent! I need to get away and do something totally new and gain some culture shock. I’m going to explain 2 things in this post for people that may also be feeling this wanderlust like myself: 1. How to control wanderlust by mini-adventures until timing/money/work etc. fits. and 2. something that I don’t yet understand, but a feeling of dissatisfaction and mild-depression.
- Okay, yes, who doesn’t want to travel the globe at all times? True, there are a lot of people that wouldn’t enjoy that, but I am not one of them. I feel I need adventure and new experiences constantly to remain happy. Not that I’m not always happy (externally). Sometimes, I just get bored and start questioning life too much… ie. what’s my purpose? I’m definitely not filling at purpose at this job. I need experience, life is short, etc. Okay, not combatting this. Option 1 is to quit your job and just do it, work as you go, couch surf, meet people, and let it all get figured out as you go. This would be amazing if one didn’t have student loans and massive bills that they don’t want to defer. Option2: Save save, and save! Save up your money in an account dedicated to travel! Even if you have a regular savings account, create a new one, maybe even at a different bank or credit union, strictly to save for travel. Put al of your disposable income there before you can go spend it on shit. And I hopefully don’t have to mention this, but use your credit cards like debit cards so that you never have a remaining balance. So put all your money in its various places, then use your credit for monthly spending, keeping to a budget that you have allowed yourself. It’s f***ing hard, especially if you new to this life as I am. In college, I was the master of not spending, just because I couldn’t… I didn’t have a savings or anything, I just had about $9 of disposable income a month. Then I got a job and started making some money and all of a sudden though I was Beyonce. STOP! You are not Beyonce and that money you earn is worth sooooo much more than fancy food, clothes, or whatever else you are buying (box wine is just fine). In the mean time, you have to do mini adventures to make up for the lack of travel. Go on google maps and find little towns near by to visit, have a weekend to explore your own area, or as they say “staycation”, Find out how far you are willing to drive/spend for a weekend and pick somewhere, maybe based on an attraction, scenic area, or friend to meet up with. There is so much to explore within the area that you already are, so do it! Okay, option 3: This option is the most difficult, however it is the one that I myself m leaning towards… Make $$$$$. Invent something, start a company, Find your passion and start making money from it. this may take a while, but if you have the perseverance and grit, then just make it happen. Then you get a passionate career and hopefully some travel.
- This specific topic is hard for me to talk about because I just passed the point of denial. Depression is something that is extremely common in this world. It is nothing to be ashamed of. The most important thing you can do is realize it and figure out what is possibly a factor to causing it. Write a list of everything in you life. Repeat… EVERYTHING in your life. That includes relationships (both family friends and romantic), work, passion, health, location and surroundings, time spent in nature, everything that you do on a daily to weekly basis needs to be included on this list. then make another list of the things you wish were on that list. First, rate everything on your actual list from 1-10 on how satisfied you are with it. Then make it a priority to focus on the low level one. Next, start adding in the wish list to your to-do list. You have hiking on your list, then go for a hike every week or so. Painting, cooking, networking, etc, whatever is on the list needs to be integrated into your actual life! As far as over all depression and dissatisfaction with life, this will help and bring more drive as it will provide new experiences and hopefully new habits. Another great habit that you should do every single day? List 3 things that you are grateful for every morning! It can be as deep as a relationship with someone that has helped you or as simple as modern plumbing. I swear, this 1 thing will change your life. It automatically makes you a more grateful and compassionate person, therefore accentuating the little celebrations in life.

My goodness you guys, I have been wanting to refurbish something like this for my kitchen for soooo long! Although, I must warn you, it was not easy, I was exhausted afterwards! Totally worth it though; getting to see it every time I walk in my kitchen makes me smile. It’s a feeling I could never get from buying something. I’m hooked! More projects to come!
- Look for something about the size you want with potential. I found this beaut for $12 at Goodwill. I knew I wanted to paint it white and that I wanted to add some height to it.
- Head to Lowes (with measurements written down). Inspiration begins at Lowes, or Pinterest. For this specific look, I purchased 2 72″ wooden posts, 3 36″ floor tiles that look like distressed wood, a can of liquid nails, sand paper, and of course, 5 cans of white satin spray paint.
- Painting is easy, just unscrew the handles and put tape over the part that is attached. For best results, sand down every surface and wipe clean. 3 coats spread out about 30 minutes each should usually do it.
- While the paint is drying, begin planning your design, this is the trial and error phase. I thought sawing my 2 posts in half and laying them side by side would work… didn’t. I then put two of the posts laying on the front and back of the surface. I measured the space in between and sawed the leftover two to fit. The excess wood sits in the middle for support. Once the design is finished, you can use the liquid nails and glue down each piece. Lastly, glue down the floor tiles on top making sure they sit evenly with the wood.
- Last step, screw back on the handles and wipe down the entire thing, after about 2-3 hours after the last coat of paint was laid.

As some of you may know, my senior year in college I had an exchange student/study abroad student ( are those the same?) live with me. Her name is Tarn and she is from London. Turns out, she’s practically a British version of myself. We had an amazing year together, but then she had to go back to the UK. She has visited the states a couple times since then and I have been lucky enough to see her, but it had been over a year and we decided that wasn’t right. New York is one of the closet half way points for us, so we picked some dates, booked flights and found a lovely Airbnb in Brooklyn! To prepare and plan and keep in touch, we created a Pinterest Board filled with fun ideas to spend our time there. I was pumped!
We met at the airport on a Thursday evening, got to the apartment within 40 minutes or so, changed quickly, and were out the door by 10pm to catch the end of a concert at The Bowery Ballroom. We got to see about 40 minutes of it before it ended and then decided to grab a drink at a super cool speak easy like bar, called Apotheke. There, we made some friends who invited us on a SOHO bar crawl with them, the night ended around 3:30am, which I was quite proud of since we had been traveling all day. Go us!
The second day was very Gossip Girl: Manhattan, Central Park, exploring the Upper East Side, drinking mimosas, and ending the day at Bleaker Street at a wonderful Italian restaurant called Volare! The Staff is the best, food was amazing, and the entire atmosphere was cozy and elegant. Fairly early night since we didn’t get much sleep the previous night.
Day 3, we awoke at 6am! Brooklyn day/Thrifting. We began at the best coffee shop I have ever been to, I wanted to live there; it was so beautiful. We then headed off to the Brooklyn Flea Market where we found some amazing things that I truly believe changed my life. I got a hat that made me feel more myself than any piece of clothing has ever done to me, a little pocket mirror from the early 1900s, a brass tin from the 1800s, an old engagement ring and a couple other little finds. We then left because I was scared I would spend all my money there, so we headed to Williamsburg Smorgasburg. If you like food, you could make a trip to New York just for this. It was incredible. After we stuffed ourselves with some of the best food in New York, we decided we needed to shop again. We went to Beacon’s Closet, Urban Jungle (My personal fave), and Monk Vintage. We don’t buy stuff new, that’s boring.
After freshening up a bit, we were off again for part two of the day: Rooftops and Views. We began at the McCarren Hotel’s Rooftop, which had decent views and cheap rose. Next up: The Wythe Hotel’s Rooftop bar, The Ides. Little did we know, It’s apparently a very popular place to go so as we walked up we saw an awfully long line. As usual, I walked into the hotel as If I was staying there, Tarn following closely (She has learned That I do this quite frequently). I began walking towards the guarded elevators right behind a small group of girls that were apart of some private party, they assumed we were with them and we made it straight up to the top within seconds. It was stunning! Expensive rose, but well worth the experience. Sunset there was beautiful, which reminded me of a place I went a while ago called The River Cafe. We decided to head there by ferry boat for our next drink! Even more spectacular views there. Dinner at Rocco’s Tacos was much needed at this point after all of the wine and champagne we had been drinking like water since 4pm. Now, 11pm, we decide it is time to go on a dive bar crawl… The only one who’s name I remember is Union Pool, a very cool place. Over all, This was my favorite day, also it lasted 23 hours, which may have something to do with it.
Day 4: Last Day, I think we may have a bit drunk from the night before… Woke up around 9:30, so 4 hours of sleep. Lots of coconut water later, we arrive at Dominique Ansel Bakery, speechless. We did a lot of walking around near Little Italy and SOHO, when I saw a place about a block away that was all plants outside and I just felt intrigued, so we walked over and stepped into the most beautiful garden restaurant and hotel, NoMo SoHo. We just had to stay, even though we knew it was going to be expensive. 1 pitcher of mimosas and eggs benny later, we were feeling good, so we walked to the financial district. I saw a gorgeous building that I felt determined to get to the top of, so we walked in, smiled at the the check in, and took the elevator to the top floor. Up there, we opened a fire exit door which led to a tiny balcony with an archway cutout overlooking the whole city! It was incredible! We pulled out the selfie stick and had some fun. We also discovered an unfinished pent house that we explored! Tired, and a little drunk/hungover, we headed back to the apartment where Tarn packed up and headed for the airport to go back to London 😦 I had a simple night in: picnic in the back patio, sunset on the rooftop, and Game of Thrones Premiere in bed. I also had amazing dreams about more New York explorations, which is kinda like another day spent there. I headed for the airport bright and early where I wrote a couple chapters in my book about opportunity and living in the moment and embracing the people around you. What I love most about New York is how easy it is to do all of those things.

So a couple weeks ago I was in an Uber with Nate and the woman was telling us of this lodge she worked at when she first moved to Utah up in Flaming Gorge, it sounded magical and I guess I made it apparent that I wanted to go there because she wrote down her name, phone number, the lodge name and phone number and gave it to me. After looking it up at work the next day, I fell in love. It is a small place with about 30 private cabins, a restaurant, and small shop, all surrounding a pleasant lake. There are hiking/cross country ski trails that surround the lake and the canyon rim, along with plenty of summer activities that I cannot wait to try late this year.
I called and booked a weekend in the larger cabin available that comes furnished with a bedroom, living room with pull out couch, table, and chairs, kitchen with stove and fully stocked cabinets, as well as a beautiful porch with view of the lake. It took about three and a half hours to get there from Salt Lake City, but the drive is incredible. Not only are the views breathtaking, as you enter Flaming Gorge you will see historical signs telling of the past residents of the canyon:dinosaurs, giant water reptiles and various sea creatures. Arriving at the premises reminded me of a childhood sleep-away camp, long driveway with a view of the cabins, people coming back from snow shoeing, and smiling happy folk galore.
After getting the keys and unpacking at our heaviness cabin, we filled up our growler and went for walk across the frozen lake to a great big rock where we watched the sunrise… The whole weekend went quite similarly, not to brag. The highlights of the premises include the AMAZING views from the canyon rim trail, where I cross country skiid for the first time, and was quite daring if I say so myself, I fell about 20 times because I was going to fast and couldn’t control turning or stopping. I also couldn’t walk well the following few days, but it was well worth it. Dogs are allowed, which will be very pleasing to me in the summer as we are getting our very own fur baby (Lando is just my Godson). Lastly, the level of remoteness that we reached felt amazing! It’s hard these days to escape the buzz of phones, TV’s, radio, Ipads, and overall non communication between people face to face.The lack of technology was refreshing… rather than watching a movie after dinner, Nate an I looked at the stars and played multiple games of cribbage (where he lost every time). So all in all I guess it was on okay trip. You can go ahead and book HERE. Have fun! (Don’t bring your computer unless you’re going to write a book).
I am a Disneyland lover… I truly believed that Disneyland was the happiest place on earth. I was wrong. Jackson Hole, Wyoming is definitely happier. The scenery for one is truly remarkable… nothing else like it that I have ever seen! Next up is the mountain of course. Snowboarder or skier, this mountain is heaven. The trees are spaced perfectly, the terrain is unbeatable, and I swear the powder there is different than anywhere else on earth, in a ridiculously good way. The town, people, shopping, COFFEE! I would say I want to live there but I thin I like it better as a vacation. A vacation once a month? Perhaps.
Don’t get me wrong… I still think about Disneyland everyday, I love it there. Disneyland is somewhere that I like to visit once a year, whereas Jackson Hole, I’m thinking realistically (financially) I could do four times a year. I will always stay at the Cowboy Village, private cabins, full breakfast, indoor pool and hot tub, and walking distance to downtown. Cowboy Bar is a must if you are in town, as well as Cowboy Coffee… if cowboy is in the title you’re in good hands. One place that I visited that I will definitely go back to for breakfast or lunch is Cafe Genevieve, amazing food and an even better Pig Candied Bloody Mary. Either way, be sure to try their famous Pig Candy. Last thing on food… Late night drunk food or even just easy dinner, check out Pinky G’s. Great Pizza, beer, easy ordering, and live music… what else could you ask for?

I LOVE Mammoth Mountain!!!
Holy cow, have you been to Mammoth yet? It is such a crazy fun mountain and you need to go there immediately (If they have pow).
Here’s how it began:
We saw that California was getting dumped on, and having the Mountain Collective Pass, we had to decide: Squaw Valley or Mammoth… Mammoth predicted more snow, so Mammoth it is. We left at 11 pm on Friday night and arrived at 7am Saturday. Epic powder, endless terrain variations, and incredible views. The tree runs were some of the best in my life! But then, we go to chairs 13 and 14 I believe and you see what you’re about to ride down and you almost want to jump off the lift to get to it sooner.

We were planning on sleeping in the truck but it was freezing, so we stayed at a motel, it was warm and had bad coffee… I couldn’t have asked for anything more.
On our very last run of the day on Sunday, it was a complete whiteout; there may have been a chance I almost went off the side of a cliff, I have no idea. SoI went immediately to the first trees I saw and had an amazing run! I wish I could give more detail the the whereabouts of all my amazing runs but I honestly don’t remember, but as long as there is powder, my experience is that every run is amazing!
I felt like the Mammoth Mountain Matron when I was up there, and I can’t wait to go back. Mammoth, you have a piece of my heart.
That’s right, I’m a hoarder. I hoard snowboards, snowboarding gear (you don’t want to see the gloves and hats bin), and most of all, I hoard snowboarding experiences. Not only do I have my season pass to Brighton resort where I have been able to go every weekend, I also have a Mountain Collective pass, which allows me to visit over 10 resorts! So far my snowboarding season has been great! Early season, powder, trees, I’ve done it all at Brighton… but now… the adventure begins!

•Milly: Every time it snows, it feels like a new mountain! Off Milly there are cliffs to skiers right, tons of rollers and natural jumps even farther right, and surprisingly not that tracked out. Fun features galore f you are creative. I haven’t had too much fun out skiers left, but that’s probably because I haven’t been back there since I discovered how awesome riding under the lift line is.
•Favorite Runs: Thunderhead, Thor and Star wars, all towards Snake. It seems to be endless amounts of fun in the trees over there, I am no where near finished exploring!
P.S. Get a Molly’s Milk in the bar to warm up mid morning 🙂
Next up… Mammoth Resort, CA
That’s a mouthful! Not just the name, when this meal is done no one goes hungry, not even the broke roommate in my case. Inspired by wanting to stuff an acorn squash given to me by a friends mom from her garden, and the first cold day of fall, which to me means holidays, and therefore stuffing, I created -deep breath- sausage, cranberry and apple stuffing stuffed squash.
• 1 large sweet onion
• 1 celery stock
• 20 oz italian ground sausage
• 2 gala apples
• 5oz dried cranberries
• 4 tbsp butter
• 3 eggs
• 1 acorn squash
• salt & pepper
• mustard powder
• 1 loaf wheat or white bread
• 1/2 loaf light rye bread
• 1 can Campbell’s cheese soup
Begin by preheating the oven to 400 degrees. Dice the onion and celery and add to a large skillet with 4 tbsp butter, salt, pepper and mustard powder. While this is sautéing, begin toasting bread and ripping into quarter sized pieces into a large bowl. When celery and onion are soft, add into bread bowl and use the skillet to then heat the sausage. Continue toasting and ripping until you have finished the loaf and a half. Flip sausage and continue stirring until fully cooked, then add to the bread mixture. Heat cheese soup with 1/2 cup water, stir, and add to the mixture. Dice apples, and add, along with cranberries. Lastly, add eggs and (remove jewelry from hands) begin to mush with your hands, mixing everything completely until you reach a nice consistency. Chop the acorn squash in half, scoop out guts, and drizzle with melted butter or olive oil. Fill with stuffing until overflowing and place in greased baking dish. Dispense the remaining stuffing into its own greased baking dish. Heat in oven for 1 hour with the solo stuffing covered for the first 30 minutes. To serve, slice squash into halves again. Bowl recommended. Enjoy.
My boyfriend recently got a second shift job, therefore I eat dinner alone now 😦 But rather than taking this sadness and alone time to craft amazing and wild dinners, I started exploring with different stir fries, salads, and much more light and healthy options that I usually just don’t do because I am feeding a male. I’ve had a few great meals that were super light but filling and delicious! I thought I had to share for any others out there that want a good and healthy dinner on the lighter fare. I don’t have any pictures of the ones I’ve made so far but I will start taking pictures soon.
Fun Fact: Spinach is the only vegetable that is more vitamin rich when cooked!

1. Ahhhmazing Summer Salad
- Rinsed Spinach
- Sliced Strawberries
- Crumbled Goat Cheese
- Glazed Pecans or Walnuts
2. Sautéed Broccoli Salad
- 1 Head of Broccoli
- 1-2 Cups of Spinach
- 2-3 Cloves of Garlic
- 1/4 cup Chopped Onion
- 1/4 cup of cilantro
- Black Pepper
- 2 tbs of Butter
- Parmesan Cheese
- Balsamic Vinegar
3. Refreshing Greens Salad
- Sugar Snap Peas
- Cherry Tomatoes
4. Rich Veggie Delight
- 1/2 cup Chopped Onion
- 1/2 cup Shredded Brussel Sprouts
- 1/4 cup Chopped Carrots
- 1/4 cup Chopped Celery
- 3 Cloves of Garlic, Diced
- 2-3 tbs of Butter
- Salt and Pepper
- Dash of Cinnamon
- Tomato Sauce
Simply sauté all ingredients together until browned. Add tomato sauce and simmer shortly. serve with parmesan cheese.
5. Homemade Balsamic Vinaigrette
- Balsamic Vinegar
- Lime Juice
- Black Pepper
- Olive Oil
- Finely chopped Garlic
